It's fine if you don't want a particular character included, but they would still count as a ship-related DNW, and you would have to specify this for each character. If you don't want any mention of him at all, I would recommend DNW'ing him in your general DNWs as well to ensure he doesn't appear in the background either. So your signup would look like:
Requested character: Alice
Requested categories: F/M, F/M/M, F/F/M
General DNWs: - Clowns - Spiders - Any mention of Bob
